If You Can't Eat Soy...Try Making This 'Chickpea Tofu!"

This morning a friend sent a video showing me how to make tofu from chickpeas! I was so excited I made it this afternoon. It’s firm, easy to make, absorbs flavours and tastes great! What a great discovery! Thank you Anita!

Firm ‘Chickpea Tofu'

Ingredients

1 cup chickpea flour

2 1/2 cups filtered water

Method

In a bowl, mix one cup of chickpea flour with one cup of water. Use a whisk to mix thoroughly and remove all the lumps.

Place a pot on the stove and bring 1 1/2 cups of water to a boil. Add the chickpea flour and water mixture. Cook at a simmer, mixing constantly for about 5 minutes. Pour into a glass container. Let it cool on the counter. Put lid on and store in the refrigerator to fully set. Turn upside down and use in lieu of tofu.
