Prawns In Spicy Tomato Sauce On Cauliflower 'Rice' When Stocks Are Low

My diet does not fit in most categories. I am not a pure vegetarian; I eat fish occasionally and I do not eat dairy. I am not vegan; I do not eat grains or soy, I am not paleo; I do not eat red meats or chicken. While we all agree vegetables are good for us, everyone makes their own individual choices. I eat what heals my body and feels right.

I keep certain staples on hand which always come in handy when my fresh veggies need replenishing and I am after a quick meal. Frozen raw prawns, organic tomato crushed tomatoes and spices came to the rescue with this fast and tasty meal.

In a non-stick frying pan, I added about two cups of cauliflower ‘rice' (cauliflower florets run in the food processor until they are rice size pieces). I added a couple pinches of sea salt and a few grinds of pepper. While I prepared the prawns. I let the cauliflower ‘rice’ cook on a medium to low heat stirring occasionally to keep the cauliflower from sticking to the pan.

As I did not have any onions, I cut up a red chilli, crushed two cloves of garlic and grated a slice of fresh ginger. I cooked the chili, garlic and ginger on a low to medium heat without oil. Covered, I let it cook for a couple of minutes. Then I added a cup of crushed tomatoes, 1/4 tsp sea salt, 1/2 tsp cumin. garam masala and 1/4 tsp ground coriander and let it cook for about 10-15 minutes uncovered. I added five washed and thawed prawns and cooked each side for about two minutes, until they were pink right through without overcooking them.

While the prawns and cauliflower ‘rice’ cooked, I finely chopped some fresh coriander.

I served cauliflower ‘rice’ with prawns cooked in a spicy tomato sauce topped with fresh coriander. Simple, fast and very delicious!
