My Ultimate Comfort Food ... Mashed Potatoes And Peas With Homemade Mango Chutney

Today was not a cooking day. Too much food in the refrigerator and the thought of cooking brought on fatigue!

After spending far too long purchasing train tickets on-line this afternoon, I felt like comforting food for dinner. Something dead easy to prepare. So I made one of my favourite childhood meals! Mashed potatoes and peas with the addition of homemade mango chutney. This combination never tires and hits the spot for filling me up and tasting scrumptious.

I do not peel my potatoes. It looks prettier if you do but I like potato skins and I buy organic or chemical free potatoes so a good scrub and removing any unsavoury bits seems adequate. After steaming the potatoes, I add a large heaping spoonful of cashew nut ‘cream cheese’ (for recipe, see blog dated 9 February 2022, titled ‘Here’s The ‘Cream Cheese’ To spread On Your Beans … Dairy Free And Easy To Make’). Add sea salt and freshly ground pepper to taste and mash the potatoes. Steam your peas and serve alongside a generous amount of mashed potatoes with a large serving of mango chutney and dig in!

Look out for my mango chutney in the coming month. It is that time of year when we are coming to the end of the mango season and tomatoes are at their peak. I opened my last jar today! So it’s time to source my mangoes and get cooking …
