Fold Your Wrap In Quarters With Different Fillings To Make A Delicious Triangle Toastie!

I came across this clever way of filling and folding my wrap on Instagram; it is so easy and delicious when cooked on a non-stick ceramic pan with lid.

Choose 4 fillings. Today I used homemade green tomato chutney, chopped onions, sliced tomatoes and firm cashew nut cheese.

Take a round wrap or soft tortilla, at room temperature, and place it on flat surface. Cut through the wrap from the centre out to one edge. You are cutting half way through the wrap in a straight line . Spread the chutney (any chutney, chilli or tomato jam, sriracha etc.) on the quarter to the left of the cut. Place your chopped onions (or baby spinach leaves, etc) on the quarter above. Fold the quarter of the wrap covered n chutney up over the onions. Place the sliced tomatoes on the quarter to the right and fold the two stacked quarters over the tomatoes. Lay slices of firm cashew nut ‘cheese’ on the last quarter and fold the three stacked quarters over the ‘cheese.’

Heat a non-stick ceramic frying pan on a medium to low heat. Carefully place your stacked triangle on the pan and cover. Cook for several minutes. Turn over with a spatula and continue to cook for several minutes covered. Place on a plate and carefully cut in two as it is very hot. The cheese should be soft and gooey and the tomatoes hot and juicy!
