Ditch The Corn Chips And Wrap Guacamole In Crisp Iceberg Lettuce Leaves!

The other day someone disparaged iceberg lettuce and I found myself coming to its defence! Of course iceberg lettuce does not make the most interesting salad but wrap guacamole in its leaves or falafel, hummus and tabouleh and it makes a spectacular wrap surrounding the rich interior with fresh, crunchy, juiciness!

It was no wonder this morning at the farmer’s market my eye caught a lovely iceberg lettuce with beautiful outer leaves. When I got home, I was starving and I made up some guacamole, wrapped several spoonfuls in a large, green leaf and devoured its deliciousness. Today I went for everything fresh in the guacamole. It is a delicious way to eat raw vegetables if crunching on a salad feels like hard work! It is delectable as an appetiser or for a snack!

Guacamole In Iceberg Lettuce Leaves

Makes 2 leaves

Ingredients

2 large outer iceberg lettuce leaves, without tears, washed, spun and dried

1 avocado, flesh removed, mashed with a fork

1-2 tbs fresh lime juice

1 clove garlic, peeled and crushed with a press

1 red chilli, stem removed and finely chopped

1 medium-sized ripe, organic tomato, chopped

1 scallion, roots trimmed and finely sliced

handful of cilantro, leaves and stems finely chopped

sea salt and freshly ground pepper to taste

Method

Wash, spin and air dry the lettuce leaves.

Mash the flesh of an avocado. Squeeze a half lime and add juice and mix through. Finely chop the chilli, peel and crush the garlic, finely slice the coriander and scallion and chop the tomato. Add them all to the mashed avocado. Add salt and pepper and taste, adjusting if necessary.

Spoon half the guacamole in to each of the lettuce leaves. Serve and enjoy immediately!
